Jenni Vaughan, RD, LDN. Jenni Vaughan is a Food Systems Senior Project Manager at the University of Arkansas for Medical Sciences (UAMS) Community Health and Research. Ms. Vaughan is a Registered Dietitian Nutritionist with a bachelor’s degree in Dietetics. From farming and food service management to community and clinical nutrition, Ms. Vaughan has valuable food systems experience. Prior to UAMS, she worked with local nonprofits and anti-hunger agencies to address food insecurity, obesity, and diet-related diseases in underserved communities. Her work focused primarily on building connections between culturally appropriate foods, nutrition education, and sustainable agriculture to effectively address health disparities. Through her role with UAMS, Ms. Vaughan continues to cultivate a culture of health and wellness by engaging community partners and stakeholders in the implementation of programs that increase the availability of healthy food. Her goal is to help strengthen the local food system so that every individual and family in northwest Arkansas has access to nutrient-dense, culturally-appropriate, and fresh food.
